Equipment Standards—General Requirements: Food and beverage equipment shall meet the applicable standards for one of the following: • National Sanitation Foundation(NSF). • Edison Testing Laboratories(ETL)to NSF Standards. • Underwriters Laboratory(UL)to NSF standards. • Canadian Standards Association(CSA)to NSF Standards. Equipment shall bear the NSF or equivalent sticker and manufacturer information. Wood is prohibited within a foodservice area.Wood doors or frames,wood shelving,wood cabinets and wood windows are not allowed. Tierra Encantada Inc New Food 130415 Page 2 3/19/13 2. Food Service Equipment: Table-mounted equipment that is not easily movable shall be sealed to the table or elevated on four(4)inch NSF legs. All floor mounted equipment shall be elevated on six(6)inch NSF legs or casters. Used NSF approved food and beverage equipment may not be changed or altered from its original condition. Contact Peggy Spadafore,your assigned Public Health Sanitarian, at 651-201-3979 to schedule an inspection for approval of any used equipment before installation. No used equipment was identified in the installation schedule. 3. Food contact surfaces: Primary food contact surfaces(tables and counters) shall be of stainless steel construction in compliance with NSF Standard No. 2 or equivalent. Plastic laminate surfaces are not acceptable for food contact and food preparation surfaces. 4. Refrigeration: Enough equipment for cooling and cold holding shall be provided.Equipment should be sufficient in number and capacity to meet the needs of the establishment. 5. Ventilation System: A Greenheck Type II hood and ventilation system is provided for the electric Vulcan range. All rooms shall have sufficient tempered make-up air and e�►aust ventilation to keep them free of excessive steam, condensation,vapors, obnoxious or disagreeable odors, smoke and fumes. Sufficient tempered make-up air(at least 55°F)shall be provided and interlocked with ventilation equipment. All open sides of a canopy hood shall overhang equipment by at least six(6)inches. E�aust ventilation systems shall be designed to prevent grease or condensation from draining or dripping onto food, equipment,utensils,walls, ceiling, linens and single-service articles. Ventilation hoods shall provide at least 50 foot-candles of shielded light at the working surfaces. Exposed utility service lines and pipes shall not be installed directly on the walls or floor,except: a. quick disconnect gas hoses approved by the American Gas Association or NSF International, and b. fle�ble cords and caps for commercial cooking equipment on casters, listed by Underwriter's Laboratory. Tierra Encantada Inc New Food 130415 Page 3 3/19/13 6. Warewashing: A Fagor FI-48W undercounter dishmachine is provided in the kitchen. NSF approved 6"legs/casters,or skids must be provided on an undercounter dishmachine. This equipment is scheduled for installation on legs. The undercounter dishmachine must be installed so that the area around it can be kept cleaned and maintained,especially the floor. A flexible installation may be necessary so that the machine can be moved for cleaning. A scrapping sink is provided to the left of the dishwasher. Shelving has been added to the wall at the warewash station to provide adequate air drying space for dishes prior to storage. 7. Food Preparation Sink: A separate two-basin food preparation sink that meets NSF International or equivalent standards far washing produce or thawing foods has been provided between the handsink and the cooking equipment. 8. Hand Sink: An NSF International or equivatent hand sink will be provided between the food preparation and warewashing stations in the kitchen. Each handwashing sink shall be provided with hot and cold water through a mixing valee or combination faucet. Self-closing or metering faucet shall be designed to provide a flow of water for at least I S seconds without the need to reactivate the faucet. 9. Storage Area: All food items are intended for storage within the approved kitchen except for food served from bottles in the infant rooms. Approved(NSF or equivalent)shelving will be provided to maintain food items, single-service items and equipment six(6}inches above the floor surfaces. Designate an appropriate chemical storage space separate from food products, single-service items and food equipment. Washers or dryers shall not be located where there is exposed food,clean utensils, linens or unwrapped single service items. Tierra Encantada Inc New Food 130415 Page 4 3/19/13 10. Floors: Floors in kitchens,bars,other rooms where food is stored,prepared or washed,employee dressing or locker rooms,toilet rooms and janitorial rooms shall be smooth,non-absorbent, durable and easily cleanable. See the approved finish schedule listed above section one. Where a wall meets the floor it must be properly coved within any foodservice area. Plumbing: All plumbing plans shall be approved by the Minnesota Department of Labor and Industry(DLI)or delegated agent. The city of Eagan, as a delegated agent,will conduct a separate review and on-site inspection to determine compliance with the Minnesota Plumbing Code. Provide evidence of these approvals at the time of the preopening inspection. All plumbing equipment shall be installed in accordance with the Minnesota Plumbing Code for a commercial establishment. All pipe chases that pass through walls shall be tightly sealed and covered. Tierra Encantada Inc New Food 130415 Page 5 3/19/13 All utility pipes shall be enclosed in walls or ceiling. Utility lines must not be placed on the floor and must be installed at least 6"off the floor. Wye adapters are not permitted. Indirect waste pipes shall not discharge into hand sinks,prep sinks or three-compartment sinks. Telltale drains are required for food service sinks(3 compartment, food preparation and dump sinks) or as required during the plumbing plan review. All hot water generating equipment(water heaters) shall be of adequate capacity to meet the needs of the anticipated demand of the establishment. A 50-gallon commercial Rheem Fury water heater is provided and reported as meeting the needs of the establishment. 13. Lighting: Food preparation areas in which food or beverages are prepared,utensils are washed shall provide a minimum of 50 foot-candles of shielded light measured 30 inches above the floor. 14. Employee Lockers,Restrooms and Break areas: Lockers or other suitable facilities shall be provided for the orderly storage of employee's clothing and other possessions. A closet in the lobby is designated for the separate storage of employee personal items. 15.
