In May of 2001 a$5,000 landscape security deposit was submitted to the City of Eagan
in conjunction with issuance of the building permit for construcrion of the building at the
above referenced location. These funds are eligible for release to the depositor at this
time.
Please note that the property owner continues to be responsible for maintaining the health
of all plantings on the property. In accordance with section 11.70 of the Eagan City Code,
the property owner must maintain all landscaped areas, and install healthy replacement
plants for any plants that die or are removed due to disease. Maintenance shall include
removal of litter, dead plant materials; unhealthy or diseased trees, and necessary
prunmg.
An inspection will be conducted by city staff next spring/summer to verify that the
condition of the landscaping is acceptable under city code. Thank you for your attenrion

Gentlemen:
Below are requirements not covered in your plans:
Sect. 5502a. 1 Handicapped ramp access at curb near designated
spaces.
Sect. 3312 (b). Exit signs as amended;letters in Exit signs shall
be a minimum of 6" in height. Exit signs are required at all
exits.
Panic hardware can be excluded if doors are marked per the
exception in Sect. 3316 a.
SBC 6001 Energy Code.
Energy calculations as per ASHRAE 90-75 calculated on 8159
degree days.
SBC 7727 Suspended Ceiling Plenum.
Shall be noncombustible construction and shall have no
combustibles in such area. This includes plastic D.W.V, p pe
and all eYectrical, telephone?Muzak wiring must be encase?in
metal conduit.
Section 2305 c as amended -
A snow (live) load of 40 PSF is required.
Certified calculations are necessary to insure requirements are
met.

I am in receipt of the roof load calculations as of this
date.
As stated in my previous letter, the State of Minnesota has
amended UBC 1973 Section 2305-c to a 40-pound live load. T`-e
reason for the amendment is that our snow load is usually of
long duration and does continuously build up thru our wi.nter
months.
The structural components must be upgraded to meet the 40-pound
live load requirements.

Ownership:
The following are corrections or requests for additional information necessary
before constructian of your project:
l. All food and'beverage service equipment must meet the applicable standards
of NSF International. This includes being constructed by an NSF authorized
manufacturer or fabricator. Any alteration to the approved piece of
equipment renders that equipment null and void as NSF approved.
2. Primary food preparation surfaces (tables/counters) must be of stainless
steel construction in compliance with Standard No. 2 of NSF International.
3. Canopy and hood construction must meet the applicable standards of NSF
International. Additionally, the requirements of the Minnesota Uniform
Mechanical Code (Section 2000) covering commercial kitchen ventilation
systems must also be met.
4. Provide a minimum of a three-compartment sink meeting the applicable
standards of NSF International with two integrally attached drainboards in
the utensil washing area. Bar glass washing sinks are not acceptable for
food utensil washing and sanitizing.
5. Frovide ard routinely use a chemicai iest kit to determine ihe sirengih of
the sanitizing agent in the final rinse water of the three-compartment
utensil washing sink.
6. Walk-in cooler shelving must be NSF International approved stainless steel,
factory precoated epoxy, or other materials designed for this type
environment. Chrome shelving is not approved.
7. Al1 equipment must be installed so that it is easily cleanable, that is,
either easily movable, sealed in place or having sufficient space
surrounding the unit to clean in place.
8. All artificial lighting fixtures located in food preparation areas, food
storage areas, dishwashing areas and walk-ins shall be effectively shielded
to prevent glass breakage onto food or food contact surfaces.

Install a sufficient number of vapor-proof light fixtures in the walk-in
cooler and/or freezer to provide a minimum of 10 foot-candles of light
throughout the unit(s).
9. A separate on-site inspection will be conducted by the state plumbing
inspector to determine compliance with the Minnesota Plumbing Code.
10. Hollow base cabinetry is not approved. Cabinetry must be on 6 inch legs
for easy cleaning, or on solid concrete pedestals.
11. Provide a handsink convenient to the prep area.
