The following are corrections or requests for adtlitional information necessary
befiare constiuction of your project:
l. Food and Beverage service equipment must meet Je applicable
standards of NSF International. Evaluation to these standards
by ETLland UL are also approved. The proper stilcker must be
displayed.
2. Primary food preparation surfaces (tables/counters) must be of
stainless steel construction in compliance with Standard No.
2 of NSF International.
3. Providl an,NSF approved ventilation hood over cooking
equipment which will capture and eliminate moisture,
vaporsi smoke, fumes and grease laden vapors.
Also, Ihe requirements of the Minnesota Uniform Mechanical
Code(sectiori 2000) covering commercial kitchen veritilation
systems must also be met.
Ventilation hoods must overhang the cooking line by at least
six inches on both ends.
4. Wall slurfaces in food preparation, dishwash~ing and storage
areas Ishall be smooth,- light colored, easily cleanable and
nonabsorbent to the highest level of splash or spray.
Stainllss steel or equivalent materials should be installed
behind the cooking line.
5. Ceilings in food preparation, dishwashing, food storage areas,
and ba'r areas shall be smooth, nonabsorbent, 1 . ght colored,
easilyl cleanable, and must not be perforated, fissured or
textured.

6. Walk-in cooler shelving must be NSF International approved
stainless steel, factory precoated epoxy, or other materials
designed for this type environment. Chrome or zinc shelving
is not approved.
7. All equipment must be installed so that it is easily cleanable,
that ils, either easily movable, sealed in place or having
sufficient space surrounding the unit to clean ii place.
8. All artificial lighting fixtures located in food preparation
areas,lfood storage areas, dishwashing areas and walk-ins shall
be effectively shielded to prevent glass breakage onto food or
food contact surfaces.

Install a sufficient number of vapor-proof light fixtures in
the walk-in cooler and/or freezer to provide a minimum of 10
foot-candles of light throughout the unit(s).
9. All hol water generating equipment (water heaters) must comply
with Standard No. 5 of NSF International, and be' of adequate
capacity to meet the anticipated demand of the establishment.
10. Hollow base cabinetry is not approved. Cabinetrly must be on

PROCEDURE FOR IRRIGATION SYSTEMS - 1996
An irrigation permit js required - please contact Protective Inspections at 681-4675.
Fees
Commercial project: $25.50 irrigation permit to cover installation of backflow preventer.
$50.50 water permit fee only if new service is installed.
$300.00 per tap if installed by City.
Residential project: $20.50 irrigation permit to cover installation of backflow preventer.
$50.50 water permit fee if new service is installed.
$760.00 oer connection - WAC.
$396.00 oer connection - water treatment facility.
Existing residence: $20.50 irrigation permit to cover installation of backflow preventer -(not
required if backflow preventer previously installed).
Meter charge: If gallons per minute are less than 25, a 1" meter will be required at a cost of
$182.00. If gallons per minute are more than 25, a 2" turbo with strainer will
be required at a cost of $822.00. This information is to be supplied by the
designer of the system.
No meter will be sold before all sewer and water inspections are complete on a new service. If new
service lines are not required, one check may be written for meter and permit costs. Receipt will be coded
to 20-3716 (meter portion oniy) with pink copy forwarded to Utility Billing Clerk.
The installer is to contact Protective Inspections at 6814675 for inspection of the inside water line and
backflow preventer. The Pubiic Works Department may be reached at 681-4300 for water turn-on and set
and seal of the meter. Inspection hours are 8:30 a.m. to 3:30 p.m. Monday through Friday. Requests for
A.M. inspections should be made on the preceding work day. Requests for PM inspections will be accepted
until 12:00 noon.

development.l The results were submiued in our report dated September 6, 1994. Project
BODX-9400 I1A.
Facavation Observadoa4
The periI spread footings were observed on May 20, 1996, by a staff engineer. Hand
auger probesi were used to assist in evaluating dhe excavation bottom soils. Thel peaetration
and turning resistance of the haad auger probe was used to evaiuate the coatistmci or deasity
of the soils.
Random, shallow pess 8han 3 feet) hand auger probes performed in the footing areas
eacovntered lsilty sand and poorly graded sand with silt fill soils wtrich were judged to be in a
medium dease condition
In our geo I hnical evaluation report, it was recommended backhoe test pits be performed
azound the plecimeter of the building to fiuther evaiuate the existing fiII soils. The backhoe
test pits could not be performed due to access limitaaons dne to existing curb ~and pavements.
Observing the fooring excavation sidewalls indicated the &11 consisted of debrisLfree,
non-organic~ mineral soil.

requirement of 95 pezcent of standard Procoor density (ASTM D 698). The ReQoa of Feld
Compaction tem and Proctor test curves were previously submitted and aze attached to this

One set of co ~ ete test cylinders for footing concrete and one ses of concrete test cylinders
for slab-on-grWe coacrete were cast by the contractor aad tested for compressive strength.

we will proceed as follows_
• no exhaust hood will be required above the cheese melter. This direction s also
confirmed by Mike Gionadi of ihe Mfnnesota Department of Health.
• class 2 hoods will be required above the piua oven and the bread oven
• gelvaniz i ductwork and standard PRV's are acceptable for use with the c ss 2 hoods
we are stili planning to install the appropriate cooling and make-up air equipm nt.

Commissioners were duly appointed by the Court and that all damages by agreement of the
parties have been paid by the City of Eagan; that the proceedings for the taking of certain rights
