Remodel will consist of: • Replacement of several old countertop /cabinet units • Replacement of old equipment • Replacement of old floor • Installation of two handsinks • Installation of a refrigerated prep unit In evaluating the plan, it is a concern that employees will not be able to obtain water for the foodservice activities that they are partaking in (filling the hot wells, coffee brewers, etc.) or a place where excess liquids may be dumped. As a result, install a dump sink. Submit location and specification (cutsheets) information to the plan reviewer for approval before installation. 1. Equipment Standards — General Requirements: Food and beverage equipment shall meet the applicable standards of National Sanitation Foundation (NSF), Edison Testing Laboratories (ETL) to NSF Standards, Underwriters Laboratory (UL) to NSF standards or Canadian Standards Association (CSA) to NSF Standards. The proper sticker, manufacturer information and embossment identification shall be displayed on the equipment. (Minnesota Rule, part 4626.0505) It can not be determined if the Merco /Savory heat lamps are NSF or equivalently certified. Provide written documentation to the plan reviewer from the manufacturer or certification company stating that this piece of equipment is in fact NSF certified. If that can not be provided, replace with a compliant version. Submit specification ( cutsheets) information on the compliant version to the plan reviewer for approval before installation. All floor mounted food preparation equipment shall be on six (6) inch NSF legs, casters or raised four (4) inch masonry base with appropriate basecove. (Minnesota Rule, part 4626.0725 and 4626.0730) All counter mounted equipment shall be on four (4) inch NSF legs or sealed to the counter top unless it is less than 30 pounds and easily moveable. (Minnesota Rule, part 4626.0725 and 4626.0730) L Lockheed Martin Corporation Food and Beverage Equipment Plan No. 090931 Page 2 April 16, 2009 Customer self - service beverage dispensers must designed to operate so as to protect the lip contact surface of glasses. (Minnesota Rule, part 4626.0575, item D) All gas fired equipment that is designed to be moveable shall be provided and installed with approved, commercially- rated, quick disconnects. (National Fire Protection Association 96 -2001 Chapter 12; Minnesota Rule, part 4626.0725 and part, 4626.0730) A full set of approved plans and a copy of the plan letter will be available at all times during construction. (Minnesota Rule, part 4626.1720 and 4626.1725) 2. Used Food Service Equipment: Used NSF food and beverage equipment cannot be changed or altered from its original condition. It is the project owner's responsibility to ensure it meets the standard. (Minnesota Rule, part 4626.0505) Approval of the used equipment will be made by Ms. Pam Steinbach inspecting sanitarian from our Metro district office. (Minnesota Rule, part 4626.0505) 3. Cabinetry within the food service area: (including salad bar and buffet tables): Plan proposes countertops to be fabricated by two rivers which is approved. All modifications /alterations to NSF equipment (cutting a hole for the drop -in sinks, utility lines, etc.) shall be made by the manufacturer or an NSF fabricator. All service counters and other millwork surfaces shall be protected with stainless steel, NSF - certified plastic laminate to Standard No. 35 (Laminated Plastics for Surfacing Food Service Equipment) or equivalent (as determined by plan review) to cover all exposed wood. (Minnesota Rule, parts 4626.0490, 4626.0495, 4626.0505, 4626.0515) Plan proposes all components (interior, exterior, back, bottom, etc.) will be wrapped in plastic laminate which is approved. However, the plastic laminate is required to be NSF certified to standard 35. Submit brand of plastic laminate to the plan reviewer for review and approval. Cutouts in millwork shall be sealed by the fabricator in an approved method. (NSF Standard No. 35: Laminated Plastics for Surfacing Food Service Equipment). All counters shall be on a solid raised masonry base of not more than four (4) inches with approved basecove or six (6) inch NSF legs or castors meeting NSF standards. (Minnesota Rule, part 4626.0725 and 4626.0730) Plan proposes cabinets to be supported by six inch stainless steel legs which is approved. The inner cabinet bottom shall be removed from below plumbed fixtures. (Minnesota Rule, part 4626.0505) Review and follow the above statement in regards to the installation of plumbing fixtures including but not limited to drop -in ice pans, and hot wells. Refrigeration — General Requirements: All refrigeration facilities must maintain potentially hazardous foods at 41° F or below. (Minnesota Rule, part 4626.0395, item B) Each refrigeration unit must have a thermometer accurate to within +/- 2° F. (Minnesota Rule, part 4626.0560 and 4626.0620) 5. Handsinks: Install an approved splashguard at handsink or maintain at least 18 inches of clearance between products and other equipment. (Minnesota Rule, part 4626.0955) If the above clearance is not met: • Order a handsink with splashguards. • Position equipment in such a manner to create the appropriate clearance. • Install a splashguard (not required to be NSF fabricated) on the wall. • Other approved methods (Contact the plan reviewer). All handsinks shall be provided with hand cleanser, single - service toweling and nail brush. (Minnesota Rule, part 4626.1440 and 4626.1445) Each handwashing sink shall provide water at a temperature of at least 110° F through a mixing valve or a combination valve. (Minnesota Rule, part 4626.1050) 6. Ventilation System: Turbochef speed oven has been allowed to operate without mechanical ventilation per the interagency review counsel. Review the enclosed policy and follow all the requested requirements. 7. Walls — General Requirements: Block walls shall be smoothly troweled and finished with a minimum of epoxy or enamel paint to provide a smooth, non - absorbent surface equivalent to an orange peel finish. (Minnesota Rule, part 4626.1325) Review and follow the above statement 8. Floors — General Requirements: Ceramic Tile — Servery area (Approved) Plan proposes to use a schleuter system as the basecove which is approved. Epoxy or polyurethane base grout shall be utilized. (Minnesota Rule, part 4626.1720) A four inch integral basecove (1/4 inch radius minimum) constructed of the same materials as the floor shall be installed at the floor /wall junctions. (Minnesota Rule, part 4626.1345) All tile and grout shall be sealed per manufacturers' recommendations. Plumbing — General Requirements: All plumbing plans shall be approved by the Minnesota Department of Labor and Industry (DOLI) or delegated agent. Submit complete plans for review to that department. (Minnesota Rule, part 4626.1040 and 1045) If there is any new plumbing or alterations to the existing plumbing, submit plumbing plans to the city of Eagan for review and approval. In addition, the city of Eagan would also be responsible for the onsite plumbing inspections. All plumbing equipment shall be installed in accordance with the Minnesota. Plumbing Code for a commercial establishment. (Minnesota Rule, part 4626.1045) All pipe chases that pass through walls shall be tightly sealed and covered. (Minnesota Rule, part 4626.1340) All utility pipes shall be enclosed in walls or ceiling. (Minnesota Rule, part 4626,1340) 10. Lighting — General Requirements: Provide effective shielding, such as plastic shields, plastic sleeves with end caps, shatterproof bulbs and other approved devices for all lighting fixtures in area of exposed food, clean equipment, utensils, and linens, or unwrapped single service and single (Minnesota Rule, g smgl use articles. ( Minnesot ,part 4626.1375) 11. Other Code Requirements: Sincerely, All other approvals from local units of government shall be obtained prior to construction beginning. This includes building construction inspections, zoning approvals or other regulatory approvals. (Minnesota Rule Chapter 1302, Construction Approvals) Obtain an electrical inspection from the Minnesota Electrical Licensing and Inspection. All electrical systems must comply with the currently adopted edition of National Electrical Code. (Minnesota Statute, part 326.244) If applicable, Contact Mr. Mark Anderson, 952 -445 -2840, for the above inspection. Comply with the Minnesota Clean Indoor Air Act (MCIAA).
